How to Make Taco Hashbrown Casserole in a Slow Cooker

Aunt Lou here.

At the end of last year, I made a Taco Crock Pot Tater Tot Casserole recipe for you guys that was an instant favorite in my family (both at my house and when I shared it with my extended family while we were out in Texas) and with our readers. Your response to that recipe got me thinking of other recipes that will satisfy your palate and be super easy to make. That is how you guys are now seeing this wonderful Taco Crock Pot Hashbrown Casserole! So yummy!

This recipe is a cinch to throw together. Beware though, when your family sees you throwing this recipe together, they are going to go nuts and bug you about how much time is left before dinner until it is dinner time. lol However, you will be the hero of your home when it is time for dinner!

If you area cheese lover, you can always add more cheese to the recipe. In my humble opinion, there is no such thing as too much cheese!

It is in the recipe, but I want to reiterate it here: make sure your country style hashbrowns are still frozen. They will thaw and cook in the crock pot. If you thaw them before you put them in the crock pot, they might be overcooked by the time the cooking time is over.

Psst…wanna make this in your oven? You can find there recipe here.

I haven’t tried putting this together the night before. My only concern is how it would change the cooking time. In the original recipe, the hashbrowns are frozen when the cooking time starts. If it is in the fridge overnight, the hashbrowns would thaw. If you give it a try, I would watch it closely to adjust the cooking time as needed.

I’m not sure if I’m missing it somewhere but what is the serving size? I’m diabetic so I have to take insulin for my carbs but I can’t find how much a serving size is.

The serving size is 1/6th of the casserole. Please keep in mind, the nutritional content depends on which products you choose to use when cooking this dish. The auto-calculation is just an automated estimate and should NOT be used for specific dietary needs.

FAQs

Should I thaw hash browns for casserole? ›

Thaw the hash browns before you start: Thawing the frozen hash browns prevents the sauce from clumping when you mix them in, and helps the casserole cook faster. You can thaw your shredded hash browns overnight in the fridge directly in their bag or for about an hour at room temperature.

Why is my hash brown casserole mushy? ›

Why is my hash brown casserole soggy? The common reason is not thawing the hashbrowns and draining any excess moisture. Frozen hashbrowns take longer to cook in the oven; if they are not cooked long enough, the liquid pools to the bottom.

How long to warm up taco meat in a crock pot? ›

Place the leftover taco meat in the slow cooker. Add a bit of tomato sauce, beef broth, or water. Cook on low for 30 minutes to 1 hour.

Can I use regular potatoes instead of frozen hash browns? ›

Substitute fresh potatoes for 30 ounces of frozen hashbrowns. Substitute diced green onions for 3 tablespoons dried chives.

How do you make frozen hash browns not soggy? ›

If you're reheating frozen hash browns, I suggest preheating your oven to 350 and covering the tray with foil. Pop this into your oven for about 20 minutes. Then, remove the foil and let them cook uncovered for another 5-7 minutes depending on how much crispiness you want.

How do you thicken a hash brown casserole? ›

Make a cornstarch slurry for a fast and easy thickener.

Use one tablespoon of cornstarch per cup of liquid you would like to thicken. Stir out all the lumps. A few minutes before your casserole is done, add it a little at a time until you are happy with the thickness. Then, let the casserole finish baking.

Why did my hash browns turn gray? ›

It depends on whether your potatoes are turning gray before you cook them or after. When you grate raw potatoes, you release starch that can cause them to oxidize, or turn dark. The best way to keep that from happening is to cover the potatoes with cold water, then drain them very well and pat them dry before cooking.

How do you make a casserole not soggy? ›

To prevent a soupy casserole, be sure to fully thaw any frozen vegetables in a colander over a bowl, and pat dry, squeeze excess moisture out of greens like spinach or chard, and quickly precook watery fresh vegetables like onions, mushrooms or squashes just until they release their moisture.

Is it OK to leave food in crockpot on warm overnight? ›

Don't leave it on 'warm' all day

The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm. After this, it needs to be cooled and transferred into the refrigerator. Why?

Will taco meat dry out in the crockpot? ›

Try not to leave the slow cooker on the warm setting for a really long time or the taco meat may begin to dry out. It should be fine for a few hours at a party!

What is the best meat to cook in a crock pot? ›

Choose the right cut: Chuck roasts, short ribs, pork shoulders and lamb shanks (think fatty and tougher meats) become meltingly tender with the moist, low heat of a slow cooker. Leaner cuts like pork tenderloin tend to dry out. Likewise, dark meat chicken — thighs, drumsticks, etc.

Do hash browns need to be thawed before cooking? ›

A: Yes, you should because you need to get rid of the excess moisture.

Should I thaw frozen potatoes before baking? ›

Just one golden rule to remember: you don't usually need to defrost your frozen potatoes before you cook them up again, so in most of the methods and recipes below, they're ready to use straight from frozen. All you'll need to get started is some space in your freezer, resealable bags and a little patience.

Can you use frozen hash browns for mashed potatoes? ›

Using frozen hash browns to make Instant Pot mashed potatoes is such a genius hack to save time, money, and effort.

How do you keep frozen hashbrowns from getting mushy? ›

When you try to cook frozen hash browns at home, be sure you put plenty of oil in your pan and get it sizzling hot before you put in your hash browns. Then resist the urge to fiddle with them and don't flip them until the first side is brown and crispy.
